Southern Thailand’s food is defined by coastal waters, centuries of trade, rich coconut groves, and serious heat. Bold, fragrant, and fire-forward, the cooking here relies on fresh turmeric, wild herbs, local seafood, and deep regional curries.
For Chapter I, Chef Gun draws on his roots in Hat Yai and the southern coast — bringing these heritage flavours to life through individual dishes, regional curries, and a selection of Southern-inspired drinks. All dishes are designed to be enjoyed individually or shared across the table.

Born in Hat Yai, Songkhla, Chef Gun grew up immersed in the bold, spice-laden seafood culture of Thailand’s deep south.
His culinary journey spans Thailand, France, and Australia — with kitchens in Chiang Mai, Phuket, and Melbourne shaping his cooking and execution.
Through Beyond Bangkok, Chef Gun brings his connection to regional Thai cooking to Ladyboy, exploring coastal heritage dishes rarely seen on Australian menus.
